- 8 oz orzo pasta
- 2 salmon fillets
- 1 cup heavy cream
- 1 cup spinach
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat and add the salmon fillets, cooking until golden brown on both sides. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Pour in the heavy cream and bring to a simmer.
- Stir in the cooked orzo and Parmesan cheese, mixing well.
- Flake the salmon and gently fold it into the orzo mixture.
- Season with salt and pepper to taste, and serve warm.

- For a lighter version, substitute heavy cream with half-and-half.
- Feel free to add other vegetables like bell peppers or zucchini.
