Description

Creamy Tuscan Salmon Orzo is a delightful dish that combines tender salmon with creamy orzo pasta, sun-dried tomatoes, and spinach, creating a rich and flavorful meal perfect for dinner.


Ingredients

  • 8 oz orzo pasta
  • 2 salmon fillets
  • 1 cup heavy cream
  • 1 cup spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the salmon fillets, cooking until golden brown on both sides. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute.
  4. Add sun-dried tomatoes and spinach, cooking until the spinach wilts.
  5. Pour in the heavy cream and bring to a simmer.
  6. Stir in the cooked orzo and Parmesan cheese, mixing well.
  7. Flake the salmon and gently fold it into the orzo mixture.
  8. Season with salt and pepper to taste, and serve warm.

  • For a lighter version, substitute heavy cream with half-and-half.
