Description

A delicious and healthy wrap filled with roasted vegetables and creamy hummus, drizzled with tahini for an extra burst of flavor.


Ingredients

  • 1 large zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup hummus
  • 4 large whole wheat tortillas
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the zucchini, bell peppers, and cherry tomatoes with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet and roast for 20-25 minutes until tender.
  4. While the vegetables are roasting, mix tahini and lemon juice in a small bowl.
  5. Once the vegetables are done, remove them from the oven and let them cool slightly.
  6. Spread hummus evenly on each tortilla.
  7. Add the roasted vegetables on top of the hummus.
  8. Drizzle the tahini mixture over the vegetables.
  9. Roll the tortillas tightly and slice in half to serve.

Notes

  • Feel free to use any seasonal vegetables you have on hand.
  • These wraps can be made ahead of time and stored in the refrigerator.
  • For added flavor, consider adding spices like cumin or paprika to the roasted vegetables.
