- 2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 tablespoon ground cardamom
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup almond milk, warmed
- 1/4 cup coconut oil, melted
- 1/2 cup pistachios, chopped
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- In a bowl, combine warm almond milk and yeast, let it sit for 5 minutes.
- In a large mixing bowl, whisk together flour, sugar, salt, and cardamom.
- Add the yeast mixture, melted coconut oil, and vanilla extract to the dry ingredients and mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
- Preheat the oven to 350°F (175°C).
- Roll out the dough into a rectangle, spread maple syrup, and sprinkle chopped pistachios on top.
- Roll the dough tightly and cut into equal pieces.
- Place the rolls in a greased baking dish and let them rise for another 30 minutes.
- Bake for 20-25 minutes until golden brown.
- Drizzle with additional maple syrup before serving.
Notes
- For a richer flavor, use roasted pistachios.
- Store leftovers in an airtight container for up to 3 days.
- These rolls can be frozen before baking for later use.
