Ingredients

  • 1 cup dried white beans, soaked overnight
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onions, carrots, and celery until softened.
  2. Add the garlic and cook for an additional minute.
  3. Stir in the diced ham and cook for a few minutes.
  4. Add the soaked beans, chicken broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.

  • For a thicker soup, mash some of the beans against the side of the pot.
