- 1 lb ham, diced
- 1 cup dried white beans, soaked overnight
- 4 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions, carrots, and celery until softened.
- Add the garlic and cook for an additional minute.
- Stir in the diced ham and cook for a few minutes.
- Add the soaked beans, chicken broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker soup, mash some of the beans against the side of the pot.
- Feel free to add other vegetables like spinach or potatoes.
- This soup can be stored in the refrigerator for up to 3 days.
