Description

A hearty and comforting slow cooker ham and white bean soup with carrots, perfect for a cozy meal.


Ingredients

  • 1 pound white beans, soaked overnight
  • 2 cups diced ham
  • 3 carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In the slow cooker, combine the beans, ham, carrots, onion, and garlic.
  3. Add the chicken broth, thyme, bay leaf, salt, and pepper.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove the bay leaf before serving.

Notes

  • For a thicker soup, mash some of the beans before serving.
