- 1 pound white beans, soaked overnight
- 2 cups diced ham
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Drain and rinse the soaked beans.
- In the slow cooker, combine the beans, ham, carrots, onion, and garlic.
- Add the chicken broth, thyme, bay leaf, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 8 hours or high for 4 hours.
- Remove the bay leaf before serving.
Notes
- For a thicker soup, mash some of the beans before serving.
- Feel free to add other vegetables like celery or spinach.
- This soup freezes well for future meals.
