A delicious and creamy slow cooker chicken tikka masala made with coconut milk, perfect for a comforting meal.

- 2 lbs chicken thighs, boneless and skinless
- 1 onion, diced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (14 oz) coconut milk
- 1 can (15 oz) tomato sauce
- 2 tbsp garam masala
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup cilantro, chopped (for garnish)
Instructions
- Place the chicken thighs in the slow cooker.
- Add the diced onion, minced garlic, and grated ginger on top of the chicken.
- In a separate bowl, mix together the coconut milk, tomato sauce, garam masala, cumin, turmeric, paprika, salt, and black pepper.
- Pour the sauce mixture over the chicken and onions in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- Once cooked, shred the chicken with two forks and stir it back into the sauce.
- Garnish with chopped cilantro before serving.
Notes
- Serve with rice or naan for a complete meal.
- Adjust the spices according to your taste preference.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
