Description

A delicious and healthy recipe for chicken shawarma bowls made in an air fryer, perfect for Ramadan.


Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 2 tsp ground paprika
  • 1 tsp ground turmeric
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • For garlic sauce: 1/2 cup plain yogurt, 2 cloves garlic (minced), 1 tbsp lemon juice, salt to taste

Instructions

  1. In a bowl, mix olive oil, cumin, paprika, turmeric, garlic powder, onion powder, salt, and pepper.
  2. Add chicken thighs to the marinade and coat well. Let it marinate for at least 30 minutes.
  3. Preheat the air fryer to 400°F (200°C).
  4. Place the marinated chicken in the air fryer basket and cook for 15-20 minutes, flipping halfway through, until cooked through.
  5. While the chicken is cooking, prepare the garlic sauce by mixing yogurt, minced garlic, lemon juice, and salt in a small bowl.
  6. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
  7. Assemble the bowls by placing mixed greens at the bottom, followed by sliced chicken, cherry tomatoes, cucumber, red onion, and parsley.
  8. Drizzle garlic sauce over the top and serve immediately.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Feel free to add other toppings like avocado or feta cheese.
  • This recipe can be easily doubled for larger gatherings.
