Description

A delicious and easy one pot meal featuring spicy shrimp, fresh tomatoes, and fragrant basil, all tossed with pasta for a delightful dinner.


Ingredients

  • 8 oz pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup chicken or vegetable broth

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and red pepper flakes, sauté for 1 minute.
  3. Add shrimp and cook until pink, about 3-4 minutes.
  4. Stir in cherry tomatoes and cook until they start to soften.
  5. Add pasta and broth, bring to a boil.
  6. Reduce heat and simmer until pasta is cooked, about 10-12 minutes.
  7. Stir in fresh basil and season with salt and pepper.
  8. Serve hot and enjoy!

Notes
