A hearty and flavorful one pot smoky ham and navy bean soup that is perfect for a comforting meal.
Ingredients

- 1 lb navy beans, soaked overnight
- 1 cup diced ham
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp smoked paprika
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Stir in the diced ham and smoked paprika, cooking for a few more minutes.
- Add the soaked navy beans, chicken broth, and bay leaf to the pot.
- Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker soup, mash some of the beans against the side of the pot.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- Freezes well for up to 3 months.
