Description

A hearty and flavorful one pot smoky ham and navy bean soup that is perfect for a comforting meal.


Ingredients

  • 1 lb navy beans, soaked overnight
  • 1 cup diced ham
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until softened.
  2. Add the garlic and cook for another minute.
  3. Stir in the diced ham and smoked paprika, cooking for a few more minutes.
  4. Add the soaked navy beans, chicken broth, and bay leaf to the pot.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a thicker soup, mash some of the beans against the side of the pot.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • Freezes well for up to 3 months.
