Description

A simple and delicious one pot meal featuring gluten free ground beef, rice, and a medley of tomato herbs.


Ingredients

  • 1 lb ground beef
  • 1 cup rice
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add ground beef, cook until browned.
  4. Stir in rice, diced tomatoes, beef broth, oregano, basil, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover.
  6. Simmer for 20-25 minutes or until rice is cooked and liquid is absorbed.
  7. Fluff with a fork and serve hot.
