A simple and delicious one pot meal featuring gluten free ground beef, rice, and a medley of tomato herbs.
Ingredients

- 1 lb ground beef
- 1 cup rice
- 2 cups beef broth
- 1 can diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Add ground beef, cook until browned.
- Stir in rice, diced tomatoes, beef broth, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 20-25 minutes or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve hot.

- For added flavor, consider adding fresh herbs.
- Can substitute ground turkey for a leaner option.
