Description

Ingredients

  • 1 cup dried beans (such as navy or great northern), soaked overnight
  • 4 cups vegetable or chicken broth
  • 2 cups kale, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, carrots, and celery until softened.

  3. Stir in the diced ham and cook until slightly browned.
  4. Add the soaked beans and broth, bringing to a boil.
