Ingredients

- 1 lb ham, diced
- 1 cup dried beans (such as navy or great northern), soaked overnight
- 4 cups vegetable or chicken broth
- 2 cups kale, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Stir in the diced ham and cook until slightly browned.
- Add the soaked beans and broth, bringing to a boil.
- Reduce heat and simmer for about 1 hour, or until beans are tender.
- Stir in the kale, thyme, and rosemary, cooking for an additional 10 minutes.
- Season with salt and pepper to taste before serving.
