Delicious and easy-to-make ground beef burrito bowls with a refreshing cilantro lime flavor, perfect for meal prep and weeknight dinners.


Ingredients

  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet, cooking until softened.
  3. Stir in chili powder, cumin, salt, and pepper, cooking for another minute.
  4. Add black beans, corn, and diced tomatoes to the skillet, mixing well.
  5. In a separate bowl, combine cooked rice with lime juice and chopped cilantro.
  6. Assemble the burrito bowls by layering the cilantro lime rice, followed by the beef mixture.
  7. Garnish with additional cilantro and lime wedges if desired.
