Description

A delicious and hearty keto ham and bean soup made with cauliflower and bacon, perfect for a comforting meal.


Ingredients

Scale
  • 1 cup diced ham
  • 1 cup cauliflower florets
  • 4 slices of bacon, chopped
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add diced onion and garlic, sauté until translucent.
  3. Add the diced ham and cauliflower florets, cooking for another 5 minutes.
  4. Pour in the chicken broth and add the white beans, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the cauliflower is tender.
  6. Stir in the cooked bacon before serving.

Notes

  • For a spicier version, add red pepper flakes.
  • Can be stored in the refrigerator for up to 3 days.
  • Freezes well for future meals.
