Description
A delicious and hearty keto ham and bean soup made with cauliflower and bacon, perfect for a comforting meal.
Ingredients

- 1 cup diced ham
- 1 cup cauliflower florets
- 4 slices of bacon, chopped
- 1 can (15 oz) white beans, drained and rinsed
- 4 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add diced onion and garlic, sauté until translucent.
- Add the diced ham and cauliflower florets, cooking for another 5 minutes.
- Pour in the chicken broth and add the white beans, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the cauliflower is tender.
- Stir in the cooked bacon before serving.
Notes
- For a spicier version, add red pepper flakes.
- Can be stored in the refrigerator for up to 3 days.
- Freezes well for future meals.
