Description

Delicious keto cheesecake bites topped with a creamy vanilla and berry mixture, perfect for a low-carb dessert.


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 tbsp lemon juice

Instructions

  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the powdered erythritol and vanilla extract, and mix until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. In another bowl, combine the mixed berries with lemon juice and mash slightly.
  6. Layer the cheesecake mixture into small cups or molds, then top with the berry mixture.
  7. Chill in the refrigerator for at least 2 hours before serving.
