- 8 oz cream cheese, softened
- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
- 1 tbsp lemon juice
Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add the powdered erythritol and vanilla extract, and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- In another bowl, combine the mixed berries with lemon juice and mash slightly.
- Layer the cheesecake mixture into small cups or molds, then top with the berry mixture.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- Feel free to use any berries of your choice.
- Store leftovers in an airtight container in the fridge for up to 3 days.
