Description

A delicious and healthy high protein turkey meatloaf served with creamy garlic mashed potatoes, perfect for a romantic dinner.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups mashed potatoes
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, salt, and black pepper.
  3. Mix until well combined and shape into a loaf.
  4. Place the meatloaf in a baking dish and bake for 45-50 minutes or until cooked through.
  5. While the meatloaf is baking, prepare the garlic mashed potatoes by boiling potatoes until tender.
  6. Drain the potatoes and mash them with milk, butter, garlic powder, salt, and pepper until smooth.
  7. Serve the turkey meatloaf with a generous scoop of garlic mashed potatoes.
