A comforting and flavorful soup made with ham, cannellini beans, and fresh thyme, perfect for chilly days.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 pound cooked ham, diced
- 2 cans (15 ounces each) cannellini beans, drained and rinsed
- 4 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook for another minute.
- Add diced ham and cook for 5 minutes.
- Stir in cannellini beans, chicken broth, and dried thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh thyme.
Notes
- For a thicker soup, mash some of the beans before adding them.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- Freezes well for up to 3 months.
