Ingredients

  • 1/2 cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1/4 cup gluten-free all-purpose flour
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh raspberries
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 425°F (220°C) and grease four ramekins.
  2. Melt the butter and chocolate chips together in a microwave-safe bowl, stirring until smooth.
  3. In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and thick.
  4. Stir the melted chocolate mixture into the egg mixture, then add the vanilla extract.
  5. Gently fold in the gluten-free flour until just combined.
  6. Pour half of the batter into each ramekin, then place a few raspberries in the center of each and cover with the remaining batter.
  7. Bake for 12-14 minutes until the edges are firm but the center is still soft.
  8. Let cool for 1 minute, then invert onto plates and dust with powdered sugar before serving.
