- 1/2 cup unsalted butter
- 1 cup semi-sweet chocolate chips
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1/4 cup gluten-free all-purpose flour
- 1/2 teaspoon vanilla extract
- 1/2 cup fresh raspberries
- Powdered sugar for dusting
Instructions
- Preheat the oven to 425°F (220°C) and grease four ramekins.
- Melt the butter and chocolate chips together in a microwave-safe bowl, stirring until smooth.
- In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until pale and thick.
- Stir the melted chocolate mixture into the egg mixture, then add the vanilla extract.
- Gently fold in the gluten-free flour until just combined.
- Pour half of the batter into each ramekin, then place a few raspberries in the center of each and cover with the remaining batter.
- Bake for 12-14 minutes until the edges are firm but the center is still soft.
- Let cool for 1 minute, then invert onto plates and dust with powdered sugar before serving.
