- 1 ½ cups gluten-free all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cardamom
- 1 cup granulated sugar
- ½ cup olive oil
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup freshly squeezed orange juice
- Zest of 1 orange
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and ground cardamom.
- In another bowl, mix the sugar and olive oil until well combined.
- Add the eggs, vanilla extract, orange juice, and orange zest to the sugar mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- Store leftovers in an airtight container at room temperature for up to 3 days.
- This cake can be served plain or with a dusting of powdered sugar on top.
