Description

A deliciously moist and fragrant loaf cake made with gluten-free ingredients, infused with cardamom and orange, and enriched with olive oil.


Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cardamom
  • 1 cup granulated sugar
  • ½ cup olive oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup freshly squeezed orange juice
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and ground cardamom.
  3. In another bowl, mix the sugar and olive oil until well combined.
  4. Add the eggs, vanilla extract, orange juice, and orange zest to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
