A quick and delicious taco casserole that is perfect for busy weeknights and loved by the whole family.
Ingredients

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups tortilla chips, crushed
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir to combine and heat through.
- In a greased baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, and half of the cheese.
- Repeat the layers with the remaining tortilla chips, beef mixture, and cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
- Top with sour cream and chopped green onions before serving.
Notes
- Feel free to add other toppings like jalapeños or avocado.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- For a vegetarian version, substitute ground beef with lentils or a meat alternative.
