Classic gingerbread cookies with warm spices and molasses.
Ingredients

- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1 large egg
- 1/4 cup molasses
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking soda, salt, ginger, cinnamon, and cloves in a bowl.
- Cream butter and brown sugar until smooth. Beat in egg and molasses.
- Gradually mix dry ingredients into wet ingredients.
- Roll dough into 1-inch balls, flatten slightly, and place on baking sheets.
- Bake for 8-10 minutes until edges are firm. Cool on wire racks.
Notes
- Dough can be chilled for easier handling.
- Store cookies in an airtight container for up to a week.
