- 2 cups chocolate cookie crumbs
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup cocoa powder
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix chocolate cookie crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth.
- Add sugar and vanilla extract, and mix until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Stir in sour cream, chocolate chips, and cocoa powder until fully combined.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Allow to cool, then refrigerate for at least 4 hours before serving.
Notes
- For a richer flavor, use dark chocolate chips.
- Top with whipped cream or chocolate ganache for extra indulgence.
- Store leftovers in the refrigerator for up to 5 days.
