A refreshing and tropical treat, these dairy-free coconut mango popsicles with lime zest are perfect for hot summer days.


Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 cup coconut milk
  • 1/4 cup honey or maple syrup
  • 1 tablespoon lime zest
  • 1 tablespoon lime juice

Instructions

  1. In a blender, combine the diced mangoes, coconut milk, honey or maple syrup, lime zest, and lime juice.
  2. Blend until smooth and creamy.
  3. Pour the mixture into popsicle molds.
  4. Insert sticks and freeze for at least 4-6 hours or until solid.
  5. To remove the popsicles, run warm water over the outside of the molds for a few seconds.
