Description

A delicious and healthy dish featuring turkey meatballs cooked in a creamy coconut curry sauce, served over fluffy jasmine rice.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped cilantro
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 cup chicken broth
  • 2 cups jasmine rice
  • 1 tbsp lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix ground turkey, breadcrumbs, chopped cilantro, egg, garlic powder, onion powder, salt, and pepper until well combined.
  2. Form the mixture into meatballs, about 1 inch in diameter.
  3. In a large skillet, heat a little oil over medium heat and cook the meatballs until browned on all sides.
  4. In a separate pot, cook jasmine rice according to package instructions.
  5. In the skillet with the meatballs, add coconut milk, red curry paste, and chicken broth. Stir to combine and bring to a simmer.
  6. Let the meatballs cook in the sauce for about 10-15 minutes until cooked through.
  7. Stir in lime juice before serving.
  8. Serve the meatballs over jasmine rice and garnish with fresh cilantro.

Notes

  • For a spicier dish, add more red curry paste.
  • Feel free to add vegetables like bell peppers or spinach to the curry.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
