A delicious and healthy dish featuring turkey meatballs cooked in a creamy coconut curry sauce, served over fluffy jasmine rice.

- 1 lb ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup chopped cilantro
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 can (13.5 oz) coconut milk
- 2 tbsp red curry paste
- 1 cup chicken broth
- 2 cups jasmine rice
- 1 tbsp lime juice
- Fresh cilantro for garnish
Instructions
- In a bowl, mix ground turkey, breadcrumbs, chopped cilantro, egg, garlic powder, onion powder, salt, and pepper until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- In a large skillet, heat a little oil over medium heat and cook the meatballs until browned on all sides.
- In a separate pot, cook jasmine rice according to package instructions.
- In the skillet with the meatballs, add coconut milk, red curry paste, and chicken broth. Stir to combine and bring to a simmer.
- Let the meatballs cook in the sauce for about 10-15 minutes until cooked through.
- Stir in lime juice before serving.
- Serve the meatballs over jasmine rice and garnish with fresh cilantro.
Notes
- For a spicier dish, add more red curry paste.
- Feel free to add vegetables like bell peppers or spinach to the curry.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
