Description

A delicious and creamy dessert made with coconut milk, cardamom, and rice, transformed into convenient bars.


Ingredients

  • 1 cup Arborio rice
  • 4 cups coconut milk
  • 1/2 cup sugar
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a medium saucepan, combine the Arborio rice, coconut milk, sugar, cardamom, and salt.
  2. Bring the mixture to a boil over medium heat, then reduce to a simmer.
  3. Cook for about 30-35 minutes, stirring frequently, until the rice is tender and the mixture is thickened.
  4. Remove from heat and stir in the vanilla extract and shredded coconut if using.
  5. Pour the mixture into a greased 8×8 inch baking dish and spread evenly.
  6. Let it cool to room temperature, then refrigerate for at least 2 hours until set.
  7. Once set, cut into bars and serve chilled.
