A delicious and creamy dessert made with coconut milk, cardamom, and rice, transformed into convenient bars.

- 1 cup Arborio rice
- 4 cups coconut milk
- 1/2 cup sugar
- 1 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut (optional)
Instructions
- In a medium saucepan, combine the Arborio rice, coconut milk, sugar, cardamom, and salt.
- Bring the mixture to a boil over medium heat, then reduce to a simmer.
- Cook for about 30-35 minutes, stirring frequently, until the rice is tender and the mixture is thickened.
- Remove from heat and stir in the vanilla extract and shredded coconut if using.
- Pour the mixture into a greased 8×8 inch baking dish and spread evenly.
- Let it cool to room temperature, then refrigerate for at least 2 hours until set.
- Once set, cut into bars and serve chilled.
Notes
- For added flavor, you can top the bars with chopped nuts or additional shredded coconut.
- These bars can be stored in the refrigerator for up to 5 days.
- Feel free to adjust the sweetness according to your taste.
