Description

A refreshing and crunchy dairy-free Asian slaw tossed in a flavorful sesame ginger dressing.

Ingredients

Scale
  • 4 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 1 cup red bell pepper, thinly sliced
  • 1/2 cup green onions, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sesame oil
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon sesame seeds

Instructions

  1. In a large bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and cilantro.
  2. In a separate bowl, whisk together the sesame oil, grated ginger, soy sauce, rice vinegar, and maple syrup to create the dressing.
  3. Pour the dressing over the slaw mixture and toss until well combined.
  4. Sprinkle sesame seeds on top and serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

  • For added crunch, consider adding sliced almonds or sunflower seeds.
  • This slaw can be made a day in advance; just keep the dressing separate until ready to serve.
  • Adjust the sweetness by adding more or less maple syrup according to your taste.
