A refreshing and crunchy dairy-free Asian slaw tossed in a flavorful sesame ginger dressing.

- 4 cups green cabbage, shredded
- 1 cup carrots, shredded
- 1 cup red bell pepper, thinly sliced
- 1/2 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sesame oil
- 2 tablespoons fresh ginger, grated
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 tablespoon sesame seeds
Instructions
- In a large bowl, combine the shredded cabbage, carrots, red bell pepper, green onions, and cilantro.
- In a separate bowl, whisk together the sesame oil, grated ginger, soy sauce, rice vinegar, and maple syrup to create the dressing.
- Pour the dressing over the slaw mixture and toss until well combined.
- Sprinkle sesame seeds on top and serve immediately or refrigerate for 30 minutes to allow flavors to meld.
Notes
- For added crunch, consider adding sliced almonds or sunflower seeds.
- This slaw can be made a day in advance; just keep the dressing separate until ready to serve.
- Adjust the sweetness by adding more or less maple syrup according to your taste.
