- 2 slices of whole grain bread
- 1 ripe avocado
- 2 large eggs
- Salt, to taste
- Pepper, to taste
- Red pepper flakes, optional
- Lemon juice, to taste
Instructions
- Toast the slices of whole grain bread until golden brown.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Crack the eggs into small bowls.
- Stir the simmering water to create a gentle whirlpool and carefully slide the eggs into the water.
- Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.
- Meanwhile, mash the avocado in a bowl and season with salt, pepper, and lemon juice.
- Spread the mashed avocado evenly on the toasted bread.
- Once the eggs are done, remove them with a slotted spoon and place them on top of the avocado toast.
- Sprinkle with red pepper flakes if desired and serve immediately.
Notes
- For a creamier avocado, add a splash of olive oil when mashing.
- Use fresh eggs for the best poaching results.
