Description

A delicious and easy recipe for coffee shop style avocado toast topped with perfectly poached eggs.


Ingredients

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • Salt, to taste
  • Pepper, to taste
  • Red pepper flakes, optional
  • Lemon juice, to taste

Instructions

  1. Toast the slices of whole grain bread until golden brown.
  2. While the bread is toasting, bring a pot of water to a gentle simmer.
  3. Crack the eggs into small bowls.
  4. Stir the simmering water to create a gentle whirlpool and carefully slide the eggs into the water.
  5. Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.
  6. Meanwhile, mash the avocado in a bowl and season with salt, pepper, and lemon juice.
  7. Spread the mashed avocado evenly on the toasted bread.
  8. Once the eggs are done, remove them with a slotted spoon and place them on top of the avocado toast.
  9. Sprinkle with red pepper flakes if desired and serve immediately.
