A quick and healthy recipe for making egg white omelet cups filled with spinach and mushrooms using an air fryer.
Ingredients

- 6 egg whites
- 1 cup fresh spinach, chopped
- 1/2 cup mushrooms, diced
- 1/4 cup onion, diced
- 1/4 cup bell pepper, diced
- Salt and pepper to taste
- Cooking spray or olive oil
Instructions
- Preheat the air fryer to 300°F (150°C).
- In a bowl, whisk the egg whites and season with salt and pepper.
- Add the chopped spinach, diced mushrooms, onion, and bell pepper to the egg whites and mix well.
- Spray the air fryer cups or silicone molds with cooking spray or brush with olive oil.
- Pour the egg mixture evenly into the cups or molds.
- Place the cups in the air fryer basket and cook for 10-12 minutes, or until the egg is set.
- Carefully remove the cups from the air fryer and let them cool slightly before serving.
Notes
- Feel free to add other vegetables or cheese for extra flavor.
- These omelet cups can be stored in the refrigerator for up to 3 days.
- Reheat in the air fryer or microwave before serving.
